Charro's Mexican Cuisine is a family-run kitchen and tequila bar in downtown Dover, New Hampshire. Our story is inspired by Jalisco — the birthplace of tequila, mariachi and the charro — and every dish we serve is rooted in that tradition, made from scratch by people who grew up eating it.

History of the Charro
The charro is the traditional horseman of México — born on the ranches of Jalisco in the 16th century, when Spanish cattle herders and Indigenous vaqueros forged a new riding culture on the highland plains around Guadalajara. Over generations, the charro became a symbol of skill, honor and hospitality: a working rider by day, an embroidered figure of pride at every fiesta.
Jalisco gave the world more than the charro. It is the birthplace of tequila, distilled from blue agave in the fields around the town of Tequila itself, and of mariachi, the music that still fills every plaza on a Saturday night. In 2016, UNESCO recognized charrería — the equestrian sport of the charros — as an Intangible Cultural Heritage of Humanity.
We named our kitchen Charro's because that spirit is what we want on every plate and in every glass: craft passed down through family, tradition treated with respect, and a table where everyone is welcomed like they've just ridden in from a long day. Bienvenidos.
